This week i’m bringing to you, a Glazed Lemon Cookie Recipe! These are simple to make & enjoyable to snack on at any time of the day.
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon finely grated lemon zest, plus 2 tablespoons fresh lemon juice
- 1/2 cup (1 stick) unsalted butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
Preheat oven to 350 degrees.
In a medium bowl, whisk together flour, baking soda, salt, and lemon zest.
In a large bowl, using a mixer, beat butter and granulated sugar until light and fluffy. Add egg, vanilla, and lemon juice and beat until combined. Lastly, beat in flour mixture.
Drop dough by heaping tablespoons, 1 inch apart, onto baking sheets.
Bake until edges are golden, 15 to 20 minutes.
Let cool on the sheets. Spread cookies with lemon glaze and let set until glaze is hardened onto cookies.
- Serve and enjoy!
To make your own glaze, follow these easy steps:
- 2 cups sugar
- 2 tablespoons finely grated lemon zest
- 1/3 cup fresh lemon juice
In a medium bowl, whisk together all the above ingredients until smooth.
Then use this lemon glaze, to glaze the top of the cookies as i mentioned in step 6.
You could also make the cookies WITHOUT the glaze, if you wish to. The cookies will be plain lemon cookies then. If you want the extra taste, i would suggest making and spreading the glaze on top of the cookies!
